To make homemade potato chips, you can follow these steps:

Choose the right potatoes: Opt for firm, waxy potatoes like Yukon Gold or red potatoes, as they hold their shape better during frying.


Wash and slice the potatoes: Wash the potatoes thoroughly to remove any dirt or debris. Using a sharp knife or a mandoline slicer, slice the potatoes into thin, uniform slices. Aim for slices around 1/8 inch (3 mm) thick.


Soak the potato slices: Place the potato slices in a large bowl of cold water and let them soak for about 30 minutes. This helps remove excess starch from the potatoes, resulting in crispier chips.


Drain and dry the slices: Drain the potato slices and pat them dry using a clean kitchen towel or paper towels. It's important to remove as much moisture as possible to prevent splattering during frying.


Heat the oil: In a deep pot or deep fryer, heat vegetable or canola oil to around 350°F (175°C). Use enough oil to fully submerge the potato slices.


Fry the potato chips: Working in batches, carefully add a handful of potato slices to the hot oil. Fry them for about 3-4 minutes or until they turn golden brown and crispy. Stir occasionally to prevent them from sticking together.


Drain and season thee chips: Use a slotted spoon or tongs to remove the fried chips from the oil and transfer them to a paper towel-lined plate or a wire rack to drain excess oil.
