Ingredients:
For Spinach Puree:
500 grams fresh spinach leaves
1 tablespoon oil
1 medium-sized onion, chopped
2-3 garlic cloves, minced
1-inch ginger, grated
2 green chilies, chopped (adjust to taste)
Water (as needed)
Salt (to taste)
For Paneer:
200 grams paneer (cottage cheese), cubed
2 tablespoons oil
1/2 teaspoon cumin seeds
1 medium-sized onion, finely chopped
1 medium-sized tomato, finely chopped
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon coriander powder
1/4 teaspoon garam masala
Salt (to taste)
2 tablespoons fresh cream (optional)
Fresh cilantro leaves, for garnish
Step 1: Preparing the Spinach Puree
Rinse the spinach leaves thoroughly to remove any dirt or impurities. Pat them dry using a kitchen towel or paper towels.
Heat 1 tablespoon of oil in a large pan or skillet over medium heat.
Add the chopped onions and sauté until they turn translucent.
Add the minced garlic, grated ginger, and chopped green chilies. Sauté for another minute until the raw smell of garlic disappears.
Now, add the spinach leaves to the pan. Stir well and cook until the leaves wilt and become tender. This should take about 3-4 minutes.
Once the spinach is cooked, remove the pan from heat and let it cool down slightly.
Transfer the cooked spinach mixture to a blender or food processor. Blend until you get a smooth and creamy puree. If needed, you can add a little water to adjust the consistency.
Set the spinach puree aside for later use.
Step 2: Cooking the Paneer
Heat 2 tablespoons of oil in a separate pan or skillet over medium heat.
Add the cumin seeds and let them splutter.
Add the finely chopped onions and sauté until they turn golden brown.
Add the finely chopped tomatoes and cook until they become soft and mushy.
Now, add the turmeric powder, red chili powder, coriander powder, and salt. Mix well to combine the spices with the onion-tomato mixture.
Cook the spices for a minute or two to enhance their flavors.
Add the paneer cubes to the pan and gently stir to coat them with the spice mixture. Be careful not to break the paneer cubes.
Pour the spinach puree into the pan and mix everything together.
Reduce the heat to low and let the Palak Paneer simmer for about 5-7 minutes, allowing the flavors to meld together.
If desired, you can add 2 tablespoons of fresh cream to make the dish creamier. Stir well to incorporate the cream.
Taste the Palak Paneer and adjust the salt and spices according to your preference. You can add a pinch of garam masala for added flavor at this stage.
