Ingredients : To make homemade pav bhaji, you will need the following ingredients:

For the bhaji:

4 medium-sized potatoes, boiled and mashed

1 cup cauliflower florets, boiled and mashed

1 cup green peas, boiled and mashed

1 large onion, finely chopped

1 large tomato, finely chopped

1 medium-sized capsicum (bell pepper), finely chopped

4-5 garlic cloves, minced

1-inch ginger, grated

2 green chilies, finely chopped (adjust to taste)

2 tablespoons pav bhaji masala

1 teaspoon red chili powder (adjust to taste)

1 teaspoon turmeric powder

Salt to taste

3 tablespoons butter

1 tablespoon oil

Fresh coriander leaves, chopped (for garnish)

Lemon wedges (for serving)

For the pav:

8 pav buns

Butter for toasting

Note: You can find pav bhaji masala and pav buns in Indian grocery stores or online.

Preparation :
Boil the potatoes, cauliflower florets, and green peas until they are soft enough to mash. Drain the water and mash them coarsely with a fork or potato masher. Keep aside.

Heat oil and butter in a large pan or kadhai over medium heat. Add minced garlic and grated ginger, and sauté for a minute until they release their aroma.

Add chopped onions and sauté until they turn translucent.

Add chopped tomatoes and cook until they become soft and mushy.

Now, add finely chopped capsicum and green chilies. Stir and cook for a couple of minutes.

Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for another minute.

Add the mashed vegetables (potatoes, cauliflower, and peas) to the pan. Mix everything together until well combined.

Reduce the heat to low and let the bhaji simmer for about 10-15 minutes, stirring occasionally. This will allow the flavors to blend together.

Meanwhile, slit the pav buns horizontally, keeping them intact.

Heat a tawa or a griddle and melt some butter on it.

Place the pav buns on the tawa and toast them on both sides until they turn light golden brown. Remove from heat and keep aside.

Once the bhaji is cooked, adjust the consistency by adding some water if needed. The bhaji should have a semi-thick, gravy-like consistency.

Taste the bhaji and adjust the seasoning if necessary.

Garnish the bhaji with freshly chopped coriander leaves.
