HOW DO WE MAKE HOMEMADE MASALA DOSA?
Masala dosa is a popular South
Indian dish made with fermented rice and lentil batter filled with a spiced
potato filling. This dish is become very popular in all over india .it become
more famous in those indian who stay abroad.Indians start hotels in all over
world in most of this hotels masala dosa is main menu .In todays article we
will try to discover recipe of masala dosa .Than lets start journey .
Ingredients:
For
the dosa batter:
· 2 cups of parboiled rice
· 1/2 cup of urad dal (skinned black gram)
· 1/2 teaspoon fenugreek seeds
· Water (for soaking and grinding)
· Salt (to taste)
For
the potato filling:
· 3 to 4 medium-sized potatoes, boiled and mashed
· 1 medium-sized onion, finely chopped
· 2 to 3 green chilies, finely chopped
· 1/2 teaspoon mustard seeds
· 1/2 teaspoon cumin seeds
· 1/2 teaspoon turmeric powder
· A pinch of asafoetida (hing)
· Few curry leaves
· 2 tablespoons oil
· Salt (to taste)
For
the dosa:
· Oil or ghee (clarified butter) for greasing the pan
Instructions:
1. Soaking and Grinding the Batter:
· Rinse the rice, urad dal, and fenugreek seeds separately.
· Soak them in water for about 4 to 6 hours or overnight.
· Drain the water and grind them separately to a smooth
consistency using a blender or a wet grinder.
· Mix both the rice and dal batter together in a large bowl.
· Add salt and mix well. The batter should be slightly thick
yet flowing. Keep it in a warm place to ferment overnight or for about 8 to 12
hours.
2. Making the Potato Filling:
· Heat oil in a pan over medium heat.
· Add mustard seeds and let them splutter.
· Add cumin seeds, asafoetida, and curry leaves. Stir for a
few seconds.
· Add chopped onions and green chilies. Sauté until the onions
turn golden brown.
· Add turmeric powder and mix well.
· Add the mashed potatoes and salt. Mix everything together
and cook for a few minutes.
· Remove from heat and keep the filling aside.
3. Making the Masala Dosa:
· Heat a non-stick dosa tawa or a flat griddle over medium
heat.
· Once hot, spread a ladleful of dosa batter on the tawa in a
circular motion to form a thin dosa.
· Drizzle a little oil or ghee around the edges of the dosa
and on top.
· Cook the dosa until it turns golden brown and crispy.
· Spread a portion of the potato filling on one half of the
dosa.
· Fold the dosa over the filling to form a semi-circle or roll
it like a cone.
· Remove from the tawa and serve hot with coconut chutney and
sambar.
Note:
Repeat the process with the remaining batter and filling to make more dosas.
