Ingredients:



For Puris:

1 cup semolina (sooji/rava)


1/4 cup all-purpose flour (maida)


Water for kneading the dough


Oil for deep frying


For Filling:

1 cup boiled and mashed potatoes


1/2 cup boiled chickpeas (optional)


1/2 cup finely chopped onions


1/2 cup chopped coriander leaves


1/2 teaspoon roasted cumin powder


1/2 teaspoon chaat masala


Salt to taste


For Pani:

2 cups fresh coriander leaves


1/2 cup fresh mint leaves


2-3 green chilies (adjust to taste)


1-inch piece of ginger


1 tablespoon tamarind pulp


1 teaspoon roasted cumin powder


1 teaspoon chaat masala


Salt to taste


4 cups chilled water


Instructions:

Prepare the puris:

In a mixing bowl, combine the semolina and all-purpose flour.


Gradually add water and knead into a firm dough.


Cover the dough with a damp cloth and let it rest for 15-20 minutes.


Divide the dough into small portions and roll them into thin discs.


Heat oil in a deep pan and deep fry the puris until they turn golden brown and crisp.


Drain the puris on a kitchen towel to remove excess oil. Set aside.


Prepare the filling:

In a bowl, mix the mashed potatoes, boiled chickpeas (if using), chopped onions, chopped coriander leaves, roasted cumin powder, chaat masala, and salt.


Mix everything together until well combined. Set aside.


Prepare the pani:

In a blender, combine coriander leaves, mint leaves, green chilies, ginger, tamarind pulp, roasted cumin powder, chaat masala, salt, and a little water.


Blend everything into a smooth paste, adding more water if needed.


Strain the mixture through a fine sieve to remove any solids.


Add chilled water to the strained mixture and mix well. Adjust the seasoning if necessary.


Transfer the pani to a serving jug or bowl and refrigerate until ready to serve.


Assemble the pani puri:

Take a puri and gently make a small hole in the center using your thumb.


Fill the puri with a small amount of the prepared filling mixture.


Dip the filled puri into the chilled pani and place it on a serving plate.


Repeat the process with the remaining puris, filling, and pani.


Serve and enjoy:

Serve the assembled pani puris immediately.


You can garnish with additional chopped coriander leaves, sev (crunchy chickpea flour noodles), or tamarind chutney if desired.
